Sips of the West Recipe Series: Night Dancer

Sips of the West is less than a week away! On Sunday, April 28, The Lobby Lounge at Fairmont Pacific Rim is set to welcome three acclaimed bars from the Pacific Northwest for a one-of-a-kind bar takeover. In anticipation for the event, each bar has generously shared its recipes for any home bartender to craft.

The ‘Night Dancer’ cocktail is made by the bar team at The Raven Room, a restaurant and bar based in Whistler Village, owned and operated by four locals who use traditional techniques to create inventive cocktails.

NIGHT DANCER

Ingredients:

  • 1.5 ounce Chamomile-infused Rabbit Hole Cavehill
  • 0.5 ounce Yellow Chartreuse
  • 1 ounce Passionfruit Firewater Cordial
  • 0.75 ounce lemon juice
  • Beetroot powder (for garnish)

Instructions:

To make the Passionfruit Firewater Cordial:

  • Add 20% of the weight of passionfruit purée in sugar.
  • Stir the passionfruit purée and sugar. For an ounce of resulting cordial, add 1 mL of Scrappy’s Firewater bitters (scale as necessary).

To make the Chamomile-Infused Rabbit Hole Bourbon:

  • Mix 1 gram chamomile per ounce of Bourbon, and let steep for 3 hours (scale as necessary).

  • Strain mixture in a fine-mesh strainer.

    To assemble Night Dancer:

    • Shake the Passionfruit Firewater Cordial and Chamomile-Infused Rabbit Hole Bourbon in ice.
    • Strain the cocktail twice in a fine-mesh strainer and serve in an Old-Fashioned glass with a king cube.
    • Garnish with beetroot powder. Enjoy!
